Cheesy Roasted Cabbage

This is a tasty side dish with a grilled steak or pork chop.

1/4 c. thinly slivered onion

3-4 c. shredded cabbage

1 Tbsp. olive oil

Salt and pepper

About 1/4 c. shredded cheddar cheese

Preheat oven to 400.

Line rimmed baking sheet with parchment paper.

Toss cabbage and onion with olive oil until well coated. Season with salt and pepper.

Spread evenly, single layer, onto the prepared baking sheet.

Bake for about 20 minutes, until the cabbage is tender, stirring at least twice, to make sure cabbage roasts evenly. Some may get a little browned, and that's ok!

Remove from oven, sprinkle the cabbage with cheese, and return to oven until it has melted.
