Asian Carrot Slaw

1/2 bunch carrots, cut into thin julienned slices

2 tsp. fresh lime juice

2 tsp. toasted sesame oil

1-2 tsp. tamari sauce

1 teaspoon honey, or more if you like it sweeter

2 tsp. toasted sesame seeds

1-2 Tbsp. snipped carrot tops (or parsley or cilantro)

Whisk together lime juice, sesame oil, tamari, and honey.

Drizzle over the carrots and toss well.

Sprinkle with the toasted sesame seeds and parsley; refrigerate until ready to serve.
