Celery, Apple, & Blue Cheese Salad

Easy and tasty! Serves 2

1 sweet, crisp apple, cored and sliced

2-3 stalks celery, sliced

1/3 cup crumbled blue cheese

Leafy salad greens for 2, torn into bite sized pieces

1 Tbsp. balsamic vinegar (or lemon juice)

1 Tbsp. olive oil

1 tsp. honey

Salt and pepper to taste

Combine apple, celery, and blue cheese in a serving bowl, then add and toss with greens. Whisk vinegar, oil, and honey, season with salt and pepper, pour over salad and toss.
