Celery Apple Waldorf Salad

An American classic! Serves 2.

1 sweet, crisp apple, cored and chopped

1/4 cup celery, thinly sliced

1/4 cup red seedless grapes, cut in half (or a 1/4 cup of raisins)

1/4 cup walnuts, coarsely chopped and toasted

2 Tbsp mayonnaise (or plain yogurt)

1 tsp. lemon juice

1 tsp. honey

Salt and Pepper to taste

Greens for two

Whisk together the mayonnaise (or yogurt), lemon juice and honey. Season with salt and

pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of greens.
