Irish Oatmeal Pancakes

Most Irish folks I know grew up on lots of oats, no wonder they're all so healthy!

These pancakes are easy to make, filling, and delicious, Makes about 12 pancakes.

½ c. flour

½ c. rolled oats

1 tbsp. sugar

1 tsp. baking powder

½ tsp. baking soda

½ tsp. salt

¾ c. buttermilk

2 Tbsp. canola oil

1 egg

Combine dry ingredients. Whisk together milk, oil and egg, then add to the dry mix.

Spoon the batter onto a hot (400) buttered griddle. When bubbles pop, flip to brown the opposite side.

Serve with warm maple syrup -or "enhanced" maple syrup:

Irish Whiskey Maple Syrup

Add 2 tsp. (+/-) Irish Whiskey into ½ c. warmed maple syrup.
