Asparagus Salad with Poppy Seed Vinaigrette

Tender salad greens, spring asparagus, goat cheese, and sweet citrus vinaigrette... divine!

Serves 4

2+ c. salad greens

2 c. asparagus pieces (1½ " - 2")

2 Tbsp. red (or green) onion slivers

1 large naval or blood orange, seeded and segmented + zest

1 Tbsp. honey

2 Tbsp. red wine vinegar

1 heaping tsp. poppy seeds

2 Tbsp. olive oil

2 oz. soft goat cheese crumbles

In a bowl, toss the greens with asparagus, onion, and orange segments.

Whisk together the orange zest, honey, vinegar, poppy seeds, and olive oil.

Lightly toss vinaigrette into salad, and scatter the goat cheese on top.

Season with salt and pepper.
