Quinoa Salad with Greens & Dried Fruit


Easy, yummy salad that keeps for a couple of days in the refrigerator.

Combine in a large bowl:

2 c. cooked quinoa, cooled

2 -3 c. spinach, chard, or beet greens, cut into thin ribbon strips

1/2 c. chopped carrots

1/4 c. chopped celery, optional

1/4 c. dried fruit- raisins, currants, blueberries, cranberries

2-3 Tbsp. snipped fresh parsley, optional

Whisk together in a separate bowl, then toss with salad ingredients:

2 Tbsp. olive oil

2 Tbsp. lemon juice

Dash salt

Drizzle of honey, optional
