Strawberry Mint Grain Salad


Terrific light meal over greens, or as a side salad with a grilled chicken breast. Great picnic lunch.

Serves 4 as a side, or 2 as a meal.

Combine in a large bowl:

2 c. cooked (and cooled) farro or wheat berries

2 c. large chopped strawberries

1-2 Tbsp. chopped green or red onion

1/4 c. chopped walnuts

3 Tbsp. snipped fresh mint

Whisk together in a small bowl:

1 Tbsp. olive oil

1 Tbsp. lemon juice

1 tsp. honey

Lightly toss the vinaigrette with the salad ingredients.

Season with salt and pepper.

Serve over greens if desired.
