Spinach and Spring Herb Salad with Strawberries


Combine in a bowl:

3-4 c. fresh spinach leaves, stems removed if desired

1 c. mixed spring herbs, such as mint, parsley, chives, basil

1 tsp. dried tarragon

1+ c. halved or quartered strawberries

Whisk together vinaigrette:

2 Tbsp. olive oil

1 Tbsp. lemon juice

1 tsp. honey

Dash salt and pepper

Lightly toss the vinaigrette into salad, and scatter with about 1/4 c. crumbled goat or feta cheese.
