Greens & Grain Bowl with Bok Choy


We love this refreshing, and filling, salad on a warm night! Serves 4

Combine in a large bowl:

2 c. chopped/shredded crunchy lettuce (can combine/substitute with spinach, kale, chard, beet greens, cabbage)

2 c. chopped/shredded bok choy (including leaves, as you wish)

2 - 2½ c. small cauliflower florets (or broccoli stems/florets)

½ - 1 c. other very thinly sliced veggies- radish, carrot, zucchini, snap peas, etc.

2 c. cooked chewy grain, such as brown rice or wheat berries

¼ c. chopped walnuts

Whisk together, and toss into salad:

2 Tbsp. olive oil

2 Tbsp. red wine vinegar

1-2 tsp. honey (+/- to your taste)

Pinch - ⅛ tsp. cayenne (+/- to your taste)

Optional ⅛ tsp. paprika

Dash salt
