Super Simple Broccoli Soup


This blender soup recipe is very quick, easy, and healthy. It contains no cream, and no potatoes, so it's very light. With just a few yummy ingredients, a meal is ready lickety-split. Perfect for soup and salad night! Makes about 3 c.

1 Tbsp. olive oil

1/4 c. chopped mild onion

1 clove garlic, rough-chopped

4 c. small-cut broccoli florets and stems

2 c. vegetable or chicken broth (add more to thin, if desired, after processing)

Salt and pepper

Saute onions and garlic in oil until soft and aromatic, (1-3 minutes).

Add broccoli and broth. Low simmer until the broccoli is just tender. Pour into a blender (or use immersion blender, if you have one) and puree until fairly smooth. Add a little more broth if you want it to be a bit thinner. Season to taste with salt and pepper.
