Sweet and Tangy Tomatillo Soup


This is very refreshing and delicious. I use basil in this soup, and would suggest sticking with that (don’t substitute with cilantro here).

2 c. chopped tomatillos

½ avocado, peeled and chopped

1 Tbsp. lime juice

½ tsp. honey

1 Tbsp. white wine or mild vinegar

Pinch of garlic salt

1 Tbsp. snipped fresh basil

Salt to your taste

Chicken or vegetable broth

Briefly puree all of the ingredients together in a blender or food processor, leaving some chunks.

Taste and adjust seasoning/ingredients as you wish (a little more honey, lime, etc. –advice from the voice of experience: make note of any changes!)

Add broth, ¼ c. at a time, short-pulse blending as you go, to bring soup to your desired consistency. We like to leave it just a little chunky.

Serve chilled.
