Tomatillo Green Gazpacho


This is a super refreshing gazpacho!

2½ c. rough-chopped tomatillo

1 small cucumber, peeled and chopped

1 small avocado, peeled and chopped

½ c. chopped green bell pepper

2 Tbsp. chopped mild onion

1-2 tsp. minced hot pepper, optional

1 Tbsp. optional snipped cilantro

1-2 tsp. honey, to your taste

¼ tsp. garlic salt

2 tsp. lime juice

¼ c. plain yogurt

1 c. chicken or vegetable broth

Puree all of the ingredients together in a blender or food processor.

Taste and adjust seasoning/ingredients if you wish (a little more honey, lime, etc. -and make a note of what you do!)

Serve chilled.
