Asparagus and Eggs


Asparagus and eggs are a delectable pairing for any meal!

A few very simple ideas:

· Serve leftover roasted asparagus on the side with scrambled eggs. Or serve with a fried egg, and sprinkle with Parmesan cheese.

· Cut asparagus into 1” pieces, and sauté in a little butter for 2-3 minutes along with chopped green onion and/or ramps. Fold into omelet along with a bit of ham and grated cheese if you like.
