Pea Hummus

This is one of our favorite ways to enjoy peas; it’s absolutely scrumptious! Serve with pita chips or crackers. Or just get out a spoon and dive in!

1 c. shelled peas (or frozen)

1/2 small garlic clove, minced

1 Tbsp. fresh mint leaves

1 tsp. dried tarragon

1 Tbsp. lemon juice

3 Tbsp. olive oil

Salt and pepper

Bring a pot of water to a boil. Shell the peas and put into strainer or colander that will fit down into the pot while you’re holding it. Dip it in and allow peas to blanch for 30-60 seconds. These peas are super fresh and won’t take long! Run under really cold water for a few seconds and set aside to drain.

Puree with all other ingredients in a mini food processor or blender until smooth.
