Crunchy Radish & Rhubarb Slaw Salad

Love the tart taste of raw rhubarb? This is a fantastic salad for you! Great slaw-type accompaniment with grilled meat and ribs. Also is delicious as a spring-fresh relish on a burger, or inside a sandwich wrap.
Combine in a bowl:
1¼ c. matchstick-cut radishes
½ c. matchstick-cut rhubarb (about 1½” long)
1 Tbsp. minced green/mild onion (+/- to your onion taste)
¼ + c. snipped fresh mint
Whisk together vinaigrette and toss into salad:
½ tsp. lemon zest
½ tsp. lemon juice
½ tsp. honey
¼ tsp. Dijon mustard
1 Tbsp. olive oil
Salt and pepper to taste
