Quick Microwave Rhubarb Sauce


This is done in two minutes. Makes 1/4 cup of sauce to serve 2.

½ c. ¼” sliced rhubarb

2 tsp. honey

Optional: 1-2 Tbsp. water or white wine, if you like it a little runny

Place in a microwave safe bowl and cook for 1½ - 2 minutes, until very soft and mushy. Mmmmm.

Stir and serve.

Serve over ice cream, top with crunchy granola and/or whipped cream, or just gobble up plain.

For a quick appetizer, stir in ¼ tsp. balsamic vinegar and spoon a dollop on top of toasted baguette slices that have been spread with brie or cream cheese.
