3 Spinach Salad Ideas


1.

Combine spinach with other greens and vegetables as you wish, like thin slices of radish, green onion, peas, small pieces of asparagus, snipped fresh herbs.

Toss with a creamy dressing, such as:

Creamy Parmesan Ranch

1 Tbsp. grated Parmesan cheese, divided

2 Tbsp. mayonnaise

2 tsp. lemon juice

1/2 tsp. Dijon mustard

1 Tbsp. snipped chives, optional

Salt and pepper

Whisk together and adjust seasoning to your taste. Add a splash of water if you want a bit thinner.

Combine spinach with chopped hard-boiled egg, crumbled bacon, and garlic croutons.

Toss with a warm dressing, such as:

Tangy Onion-Bacon Dressing

2 slices bacon

1 Tbsp. chopped green onion

3 Tbsp. olive oil

2 Tbsp. red wine vinegar

1 tsp. Dijon mustard

Salt and pepper

Cook the bacon until crispy in a skillet. Remove bacon, cool, crumble, and set aside for the salad.

There should be just a little grease, and maybe a few tiny bits of bacon left in skillet. Add the green onion, and low saute for about 1 minute. Remove from heat. Whisk together the oil, vinegar, and mustard, and add to the skillet, whisking into the onion, bacon bits and grease in the skillet.

Gently re-warm if needed, and serve over prepared salad.

3.

Combine spinach with sliced strawberries, chopped green onions, and optional toasted, sliced or slivered almonds.

Toss with a sweet dressing, such as:

Sweet French Vinaigrette

2 Tbsp. light oil

2 tsp. red wine vinegar

2-3 tsp. honey (to your taste)

2 tsp. ketchup

1/4 tsp. Worcestershire sauce

Salt

Whisk together and adjust seasoning to your taste.

Basic variation: omit ketchup and Worcestershire sauce; substitute your choice of acid (lemon, lime, apple cider vinegar, etc.)
