Basic Pan Roasted Radishes

This is so simple, and equally suited to be a casual picnic accompaniment, or an elegant dinner party side dish.
2 Tbsp. butter
2 c. radish quarters or wedges (small, bite-sized)
2 tsp. lemon zest
2 tsp. snipped chives, or green onion tops
Salt and pepper
Melt butter in skillet, stir in radishes, and cook until they are firm-tender and golden brown (stir occasionally to help brown on all sides), about 5-8 minutes, depending on your wedge size.
Remove from heat and gently toss in the zest and chives; season with salt and pepper.
