Oven Roasted Radishes with Mustard Vinaigrette

Roasted radishes are SO delicious! This is a great side dish that really shows them off.
2 c. radish quarters or wedges (small, bite-sized)
1-2 tsp. olive oil
Salt and pepper
Preheat oven to 400. Line a rimmed baking sheet with parchment paper.
Toss the radishes with olive oil, and season with salt and pepper.
Roast for about 20-30 minutes (depending on the size of your pieces), until firm-tender and golden brown.
Remove from oven and toss with 1 Tbsp. or so of the vinaigrette. Serve warm or room temperature.
Mustard Vinaigrette
Whisk together:
2 tsp. Dijon mustard
1/2 - 1 tsp. honey (to your taste)
1 tsp. white wine vinegar
2 Tbsp. light oil
2 Tbsp. snipped chives or slivered green onion
Dash salt
