Radish Brushetta

Radishes become mild and slightly sweet when roasted or sautéed.

Sauté small chunks of radishes and a bit of minced garlic, in 2 tsp. of olive oil for about 5-8 min. until lightly browned. Season with salt and pepper. Add a little snipped radish greens, mint, basil, or other favorite herb, and lemon zest if you want some brightness.

Sprinkle a little garlic salt into 2 Tbsp. olive oil. Brush both sides of baguette slices with the oil and bake in a preheated 400 oven for 5-10 minutes, until nicely browned.

Place a scoop of the radish mixture onto each toasted baguette slice. Top with washed, snipped herb leaves as a garnish if you’d like.
