Chocolate Kale Chips

Chocolate on your veggies? You betcha!! A little boy in our neighborhood once told me that he liked chocolate covered potato chips, and it gave me an idea. He now says he likes these even better.

2-3 c. kale leaves, stems removed

1 tsp. coconut oil

1/4 c. melted semi sweet chocolate chips

Salt

Preheat oven to 300. Line a baking sheet with parchment paper.

Wash and dry the kale; the drier the kale, the crispier the chip. Cut or tear the leaves into about 2” “chip” pieces. Massage the kale leaves with the oil using your hands, so that all are thoroughly coated.

Bake until crisp, about 10 minutes, turning once, if you want to help them be evenly roasted.

Kale should be browned, but not burnt, when done.

Remove from oven; drizzle with a little chocolate and sprinkle with salt. Enjoy!

If desired, add a dash of cinnamon, ginger, nutmeg, chipotle powder, garnish with toasted coconut flakes, finely chopped nuts, citrus zest, or other flavor seasoning of your choice.
