Sweet Kale Salad with Almonds & Dried Fruit

This is a super salad for a work day dinner; you can mostly prepare it in the morning.
1 tsp. lemon juice
1/2 -1 tsp. finely minced mild onion or shallot
1 tsp. honey
1/4 tsp. salt
pinch red pepper flakes
4 c. kale leaves, shredded or ribbon cut
1 Tbsp. olive oil
2 Tbsp. sliced almonds
1/4 - 1/3 c. dried fruit of your choice- raisins, cranberries, cherries, chopped dates, apricots, etc.
2 oz. shaved or shredded Parmesan cheese
Whisk together lemon juice, shallot, honey, salt and pepper flakes. Toss with kale, and massage for a few seconds with your hands. Allow to rest about 15-20 minutes. Blend in the olive oil, coating the kale well. (Do-ahead tip: the salad will keep for a day in the refrigerator at this point; and the kale will really soften nicely).
In a dry pan, toast almonds over medium heat, tossing continuously, until they begin to brown, about 1 - 2 minutes.
Combine the almonds, dates, and Parmesan with kale just before serving.
