Beef and Broccoli with Soba Noodles

A delicious all-in-one pasta dinner.
1/2 lb. soba noodles (or whole wheat spaghetti)
Sesame oil
Olive oil
3/4 lb. (+/-) thinly sliced strips of beef
Salt and pepper
1 tsp. minced or pressed garlic
1 tsp. peeled and minced ginger
Pinch of crushed red chili flakes, optional
About 4 c. small broccoli florets
Tamari or soy sauce
1-2 green onions, thinly sliced
Bring a salted pot of water to a boil for the pasta.
Meantime, season and saute beef in 1-2 Tbsp. olive oil over high heat until browned. Lower heat to medium, add the garlic, ginger and chili flakes (if using) and continue to cook until meat is done, about 2-3 minutes more. Remove beef from skillet.
Cook the soba noodles al dente according to package instructions. Drain, reserving about 1/2 c. of the pasta water. Toss the noodles 1 Tbsp. sesame oil.
Add about 1/4 c. pasta water to the skillet that cooked the beef, scraping up remaining bits of browned garlic and ginger into the water. Add the broccoli and cook about 5 minutes until it is dry and brown. (add a bit of water as it cooks, if needed, to keep it from burning).
Toss in the noodles and beef and add a shake of tamari, then adjust to your taste, and cook on low just until warmed through –1-2 minutes. If you wish, add a splash of the pasta water too, until the dish is at your desired consistency.
Garnish with sliced onions.
