Broccoli & Basil Veggie Salad

An all-around really good salad. It’s a go-to at our house in the summer.
Combine in a bowl:
2 c. chopped broccoli
2 c. chopped or sliced other seasonal veggies, such as: radishes, summer squash, cauliflower, carrots, peas, green beans, kale ribbons, cabbage, etc.
2 Tbsp. slivered green or red onion
2 Tbsp. finely snipped basil leaves (+ a few snipped mint leaves, if you wish/have)
Whisk together and toss into vegetables:
½ garlic clove, minced
2 tsp. honey
2 Tbsp. lemon + 1 tsp. lemon zest
1 Tbsp. white wine vinegar
Salt and pepper
¼ c. olive oil
1 tsp. bottled horseradish
Dash salt and pepper
Sprinkle with a little grated parmesan if desired.
