Broccoli Avocado Salad

We love this simple salad. The creamy texture of the avocado makes it.

4 c. small broccoli florets

1 ripe avocado

2 Tbsp. olive oil

1 Tbsp. lemon juice

1 Tbsp. Dijon mustard

Salt and pepper

Steam the broccoli until it is crisp tender and bright green. Cool. Peel and dice the avocado and fold into the broccoli. Whisk oil, lemon juice and mustard together and toss into the broccoli and avocado. Season with salt and pepper.
