Maple Mustard Salmon and Broccoli

Sweet and tangy roasted salmon and broccoli is a yummy combo- this easy dish is a winner!
Serves 2
2-3 c. broccoli florets, with some stems (or use broccolini with stems)
2 Tbsp. olive oil
1 Tbsp. +3/4 tsp. tamari or soy sauce
Salt and pepper
2 tsp. maple syrup
1 Tbsp. Dijon mustard
1 tsp. lemon juice
2 skinless salmon fillets (4-6 oz. each)
Preheat oven to 425.
Line a rimmed baking sheet with parchment paper (or greased foil).
In a bowl, combine 2 Tbsp. olive oil and 1 Tbsp. tamari; toss in the broccoli, and stir to coat well. Lay on the baking sheet and roast for about 10 minutes, or until starting to brown.
Meanwhile, whisk together the maple syrup, mustard, lemon juice, and 3/4 tsp. tamari.
Remove the broccoli from oven, place the salmon on top of the roasted florets, and drizzle with the
maple syrup mixture. Roast for approx. 10 minutes, until the salmon is almost done.
Turn the oven to broil. Raise the oven rack to 4” from heating elements and broil the salmon 2-3 minutes, until the fillets are lightly brown.
