Cucumber and Strawberry Salad

Very refreshing! A great combination of some summer favorites.

Salad:

1 c. quartered or halved strawberries

1 c. large-diced cucumbers (so they’re about the same size as berries)

1 c. snap or snow peas, whole or halved, -optional

1/4 c. crumbled feta

1/4 c. snipped mint leaves

Dressing:

2 Tbsp. olive oil

1 Tbsp. lemon juice

Salt and pepper

Combine the first five ingredients. Whisk dressing and toss gently into the salad.
