Broccoli Galette

I love a galette. They're super easy to make, a real treat, (it's pizza made with pie crust), and looks hipster-rustic. Simple, yummy, and cool- a true winning trifecta! It's so versatile, you can substitute with whatever veggies and cheese you have on hand. Remember- fear not the vegetable!
1 pie crust, 9" (store-bought, refrigerated is fine- thaw according to pkg. instructions)
Dijon mustard, about 1 Tbsp.
4 c. (+/-) small-bite sized broccoli florets
1/4 c. sliced green or other mild onions
1/4 -1/3 c. crumbled feta, goat cheese, or other melty cheese of your choice
Preheat oven to 400.
Place rolled out crust on a parchment lined baking sheet.
Spread mustard over the crust, leaving a 1"-2" border.
Scatter the broccoli and onions evenly over the crust, still leaving the border. Sprinkle with the cheese.
Fold the edges of the crust toward the middle, overlapping a bit -so that you cover about an inch of the toppings.
Bake for about 20-30 minutes, or until golden brown.
