Grilled Summer Squash and Zucchini

Summer Squash is often forgotten as a grill vegetable, but it is delicious, versatile, and pretty.

Cut the squash in half lengthwise (or if you want to get fancy, cut in long,

diagonal 1/2” slices).

Brush with olive oil and season with salt and pepper.

Grill over direct medium heat for about 2 minutes each side or until they are tender and have nicely browned grill marks.

Optional:

Whisk together and drizzle over grilled squash:

· 2 Tbsp. olive oil, 1 Tbsp. lemon juice, 1 tsp. coarse or Dijon mustard, salt and pepper

* Variation: delete mustard and add 2 tsp. snipped herbs of your choice (mint, basil, etc.)

* Variation 2: sprinkle with shredded or grated parmesan
