Mint Tea

Iced mint tea is a very popular drink with our farmers all summer long.

The "recipe" is really to your taste, so you may need to experiment to get an ingredient ratio that is just right for you. Here's mine:

About 10-15 big mint leaves for every 1 c. water. Sometimes I'll sweeten with a little honey. Sometimes I like it unsweetened.

Wash mint leaves. Tear, pinch, and twist them to release their aromatic "juices".

Place in your cup, pitcher, or teapot.

Add boiling water and allow to steep about 5-10, or until it is to your desired strength. Pour through a sieve to strain out the leaves.

To make iced mint tea, first allow the strained tea to get to room temperature, and then refrigerate.

Once chilled, pour over ice to enjoy; add a bit of honey and/or lemon if you wish.

Is good hot too!
