30-Minute Pickled Strawberry Salad

Sounds weird, but it's very mild; a 30-minute pickling time gives the strawberries a slight sweet-tart taste. Try it, I think you'll like it!
Strawberry Pickles
1/2 c. water
3 Tbsp. red wine vinegar
1 Tbsp. honey, + 1 tsp.
1/4 tsp. salt
1 green onion, thinly sliced
1 c. strawberries, halved or quartered
2 Tbsp. olive oil
Several big handfuls salad greens
1/4 c. sliced, toasted almonds (Trader Joe's sells them pre-toasted)
Salt and pepper
To make strawberry pickles, combine the water, vinegar, 2 Tbsp. honey, salt, and onions in a medium bowl. Add the strawberries, making sure they are covered with the liquid. Allow to sit for about 20-30 minutes.
Drain, saving 3 Tbsp. of the liquid. Whisk together with 1 tsp. honey and olive oil to make the salad's vinaigrette.
Lightly toss together the greens, strawberries, and almonds. Dress with the vinaigrette, and season with salt and pepper if desired.
