Zucchini Sticks

These are great for an appetizer, or fun as a side dish for the kid in all of us!

2 or 3 medium zucchini and/or yellow summer squash, sliced into 3" x 1/2" sticks

1 egg, beaten

½ cup seasoned whole wheat bread crumbs

¼ Tbsp grated parmesan cheese

½ tsp garlic powder

¼ tsp. salt

Dash pepper

Canola or olive oil spray

In a ziplock bag, place breadcrumbs, cheese, and garlic powder, salt and pepper, and shake well. Dip zucchini sticks into beaten egg then drop into bag with the bread crumb mixture, a few at a time, shaking to coat. Place the breaded zucchini in a single layer, not touching, on a greased baking pan. Coat all exposed sides with cooking spray. Bake at 425° for about 20 minutes, turning once, until golden and tender. Dip in your favorite marinara sauce.
