Blue Cheese Croutons

A delicious "re-purposing" of leftover bread or dinner rolls!
1 c. rustic French-type bread, crusts removed and cut into 1” cubes
1 Tbsp. olive oil
1 oz. blue cheese, small crumbled (about 3 heaping Tbsp.)
Preheat oven to 350. Stir together and place on a parchment lined baking sheet and bake for 15 minutes, tossing 2-3 times to turn and coat the bread cubes with melting cheese. They’re done when the croutons are browned on all sides & crisp.
