Cucumber Mint Refrigerator Pickles

Love mint? Try this recipe that substitutes traditional dill with mint. Yummy in Greek wraps!
1 medium cucumber, peeled, halved lengthwise, and cut into thick chunks
1 tsp. apple cider vinegar
1/2 tsp. honey
1 Tbsp. mild oil, such as grapeseed, sunflower or canola
1/4 c. finely snipped mint
Salt and pepper
In a bowl, whisk together the vinegar, honey, and oil. Stir in mint and season with salt and pepper. Toss with the cucumbers and put into a glass jar. Turn jar occasionally, and allow flavors to meld at least half an hour before serving.
