Cucumber Mint Salad with Tahini Vinaigrette

Super refreshing little side salad for a hot summer day!
Vinaigrette
Whisk together:
1 Tbsp. tahini
1/3 c. olive oil
2 Tbsp. lemon juice
1 small clove of garlic, minced
1 Tbsp. honey
1/3 c. plain yogurt
2 Tbsp. white wine vinegar
Salad
Blend together:
1 medium cucumber, peeled and sliced thin
1-2 Tbsp. fine chopped mint
Pour vinaigrette over the salad; garnish with a little chopped mint.
