Greek Tzatziki

Tzatziki is especially delicious as a salad dressing on a sharp greens salad or in a wrap, a dip for raw veggies, and as a spread for lamb or beef burgers.
1/2 c. plain Greek yogurt (or sour cream)
1/3 c. finely chopped cucumber
1/2 tsp. pressed or minced garlic
1 Tbsp. finely snipped mint or dill, or 1 tsp. dried
1 tsp. lime zest + 1/2 tsp. lime juice
Salt and pepper
Put cucumber in a sieve, lightly sprinkle with salt and drain over a bowl for at least 1 hour; or place cucumber in a sackcloth towel and tightly squeeze out as much liquid as you possibly can.
Combine yogurt and cucumber, then add garlic, mint and lime zest and juice. Blend well.
Season with salt and pepper.
