KohlSlaw


Kohlrabi is an outstanding change-up to "the usual" coleslaw! This is a favorite in our house.

Combine in a large bowl:

2 c. shredded cabbage or kale (massaged in 1 tsp. oil with your hands 1-2 minutes to soften)

1 c. shredded kohlrabi

1-2 stalks celery, with leaves

1 c. thinly sliced radish and/or carrots

1-2 Tbsp. thinly sliced green onion

1-2 tsp. snipped chives, optional

Whisk together and toss into vegetables:

3 Tbsp. maple syrup

1/4 tsp. celery seed

1/4 c. mayonnaise

2 tsp. apple cider vinegar

Salt and pepper to taste
