Cucumber and Kohlrabi Salad

The sweet herb vinaigrette makes this cool salad taste super garden fresh.
A good ratio for this salad is about 3 to 1 (3 c. cucumber/1 c. kohlrabi)
1 medium cucumber, peeled, and sliced into 1/4" thick wedges (quartered rounds)
1 small kohlrabi, peeled if desired, and cut into small 1/4" cubes
1 Tbsp. green onion, thinly sliced
Several big handfuls of lettuce, roughly chopped (optional*)
Sweet Herb Vinaigrette
1/2 small clove garlic, minced or pressed
1 spring onion, rough-chopped
1/4 c. mixed herbs of your choice (parsley, basil, mint, etc.- I sometimes add a sprinkling of a favorite dried herb if I don't have it fresh, such as tarragon, just because we like it)
1 Tbsp. white wine vinegar
1/2 tsp. Dijon mustard
1 tsp. honey
1/4 c. olive oil
Salt and pepper
*We like this salad both with, and without, the greens. Use less dressing if no greens.
