A Coleslaw Template


This is a recipe to use as a base for your own creative culinary genius!

Whisk together in a small bowl:

¼ c. mayo

2-3 tsp. apple cider vinegar, (start with 2 tsp.; add more to your taste)

½ - 1 tsp. honey, to your taste

Salt and pepper to taste

Put about 3 - 4 packed cups shredded cabbage into a large bowl

Add about 1 c. or so of a few other veggies that you think will work well together- shredded, matchstick cut, sliced or chopped. All good. Carrot, kohlrabi, broccoli stalk, peppers, radish, green or red onion, slivered greens, fruit, dried fruit, nuts, seeds... or go rogue with prosciutto, dill pickle, cheddar cheese.... whatever you have on hand and what strikes your fancy.

Toss dressing lightly into the slaw. Enjoy!

A few idea starters:

Give your slaw a seasonal twist:

· Green onions, chives, radish in spring

· Bell or hot peppers, corn, beans in summer

· Matchstick cut apples, walnuts, pepitas in fall

· Shredded kale, squash, brussels sprouts, shallots in winter

Highlight a flavor profile:

· Asian Slaw

· Curried Slaw

Add zing to the dressing with a splash, dash, sprinkle, or smidgeon:

· Minced garlic

· Lemon, lime, orange, or cranberry juice

· Worcestershire Sauce

· Rice, fruit or balsamic vinegar

· Hot Sauce

· Dijon mustard

· Maple syrup

· Substitute mayo with ½ mayo, ½ plain yogurt

· Tamari/soy sauce, sesame oil

· Spices– cayenne, chili pepper, cumin, curry, ginger, etc.

· Herbs– dill, basil, tarragon, oregano, parsley, fennel, etc.

· Seeds– celery, caraway, coriander, mustard, dill, etc.

Consider Asian and Curry Dressings just a couple of starter ideas for you to create a new favorite slaw of your own!

Some good additions to Asian cabbage slaws- green onion, carrot, radish, sesame seeds, sriracha

Asian Soy Ginger Dressing

1 Tbsp. rice vinegar (or white wine vinegar)

1 Tbsp. toasted sesame oil

1 tsp. olive oil

1 Tbsp. soy sauce

1 tsp. honey

¼ tsp. minced ginger

½ small clove garlic, minced or pressed

Asian Peanut Butter Dressing

1 Tbsp. creamy peanut butter

1 Tbsp. warm water

1 Tbsp. rice vinegar

1 Tbsp. lime juice

½ tsp. grated ginger

½ tsp. soy sauce

½ tsp. sriracha sauce, optional

Excellent slaw additions with curry dressing include: craisins or dried fruit, walnuts, shredded brassica leaves and stems

Curried Dressing

2 Tbsp. mayonnaise

1 Tbsp. plain yogurt or sour cream

2 tsp. milk

1/4 tsp. curry powder
