Dill Cabbage and Cucumber Slaw

A very cool and refreshing summer slaw. It's especially nice with green cabbage, (I think because it's reminiscent of a dill pickle), but red cabbage tastes good too!

4 c. thinly shredded cabbage

1 medium cucumber, very thinly sliced

2 Tbsp. snipped dill

3 Tbsp. white wine vinegar

1 Tbsp. honey or organic sugar

1 tsp. salt

2 Tbsp. water

Combine the cabbage, cucumber and dill together in a bowl.

Whisk the vinegar, honey (or sugar), salt and water until all is dissolved and well-blended.

Toss vinaigrette into salad, cover, and refrigerate.

Allow flavors to blend at least an hour before serving.
