Cabbage, Greens, & Peanuts Salad

The combination of cabbage and greens provides a very tasty, attractive, and healthy salad.

Use this method for any slaw; simply change the dressing.

4 c. shredded cabbage

2 c. shredded/ribbon cut kale*, chard, spinach, beet and/or other greens

Juice from 1 lime 2 tsp. Dijon mustard 1/4 tsp. ground cumin 1/4 cup peanut oil

2 tsp. honey, optional 1/4 cup roasted unsalted peanuts, coarsely chopped Salt and pepper to your taste

Toss cabbage and greens together in a large bowl.

Whisk together the lime juice, mustard, cumin, and oil. Toss with cabbage and greens and season with salt and pepper. Scatter with peanuts.

*To soften kale leaves, massage in 1 tsp. olive oil for a few minutes with your hands.
