Cabbage Chips

Like kale chips? You'll love these too!
Preheat oven to 250°.
Line 1 or 2 rimmed baking sheets with parchment paper.
Use the innermost cabbage leaves for chips– 8-12 of them. Cut into quarters, (large chip size), trimming off the tough ribs as you go. Brush with olive oil, place single layer on the baking sheet and sprinkle with salt and pepper, plus caraway seeds if you like. Bake until crispy- watch, as baking time will depend on the size of your chips. Delicious solo, or served with a creamy dip.
