Cabbage Salad with Buttermilk Dressing


A rich and creamy slaw. This is a small batch, double if you want to serve 4-6.

Combine in a bowl:

2 c. finely shredded cabbage 2-3 radishes, diced

1 carrot, diced 1 stalk celery, diced

1 Tbsp. thinly sliced green or other mild onion

Whisk together:

¼ c. buttermilk 1 Tbsp. mayonnaise 1 Tbsp. unfiltered apple cider vinegar 1-2 tsp. honey (to your taste) 2 tsp. snipped chives, optional

Lightly toss your desired dressing quantity with cabbage mixture; you may have some leftover dressing. Not a bad thing!- use on tomorrow's lettuce salad!
