Colorful Slaw


Using lots of brightly colored veggies make this slaw fun and festive!

Toss in others you may have on hand, like corn, zucchini, and radishes (cut in matchsticks).

Mix together in a bowl:

4 cups shredded cabbage

1/2 red bell pepper, julienned (cut in long, thin strips)

1/2 green bell pepper, julienned

1 cup grated carrots

2-3 Tbsp. very thinly slivered green or red onions

Whisk and toss into vegetables:

1/3 cup mayonnaise

1 Tbsp. apple cider vinegar

1 Tbsp. raw cane sugar or honey (or use less, to your taste)

1/2 tsp. celery seed

Salt and pepper to taste

Refrigerate, covered, for several hours before serving.
