Fumi Salad

This is my mom's recipe; a favorite since the 1970's.

3-4 packed cups green cabbage, shredded

1/4 - 1/2 c. shredded carrot (optional)

2 green onions, thinly sliced

1/4 cup toasted sliced or slivered almonds

1/4 cup toasted sesame seeds

1/4 cup light vegetable oil (such as sunflower or canola)

2 Tbsp. honey (or organic sugar)

1 Tbsp. rice vinegar

Salt and pepper

1 package of ramen noodles, crumbled

Combine cabbage, onions, nuts and seeds in a bowl. Whisk together oil, honey and vinegar, then season with salt and pepper. Toss with cabbage.

Refrigerate. When ready to serve, stir in ramen.
