Cheaters Cauliflower Salad


It happens to us all. Sometimes we’re just too tired to cook.

Here’s a quick and easy salad, for just such a day.

3-4 c. bite-sized cauliflower (&/or broccoli)

2-3 green onions, chopped (or other mild onion)

1 carrot, shredded, (optional, depending on how tired you are)

1/2-1 c. sharp cheddar cheese, shredded

Handful of raisins

1/4 -1/2 cup mayo, sweetened with a little honey or maple syrup to your taste

Note: Add other chopped veggies if you have a few misc. items to use up in the fridge- whatever you have- sliced radish, broccoli stem, kohlrabi, halved beans, peas, thin bell pepper strips, ribbon snipped greens, etc. But remember, this is supposed to be easy!
