Green Onion Snack Cakes

Tasty treats with a kick!
1 bunch green onions, trimmed and divided
1 egg
1 tsp. tamari (or soy sauce)
3 Tbsp. snipped fresh parsley
½ c. flour
Canola oil
Coarsely chop and steam half of the green onions until they’re tender (about 3-5 minutes).
Puree in a mini food processor or blender until smooth. Add a splash of water if needed.
Mince the other half of the onions, then combine in a bowl with pureed onion, egg, tamari, and parsley. Whisk well.
Gently fold in the flour, stirring just until batter is moist and well mixed.
Coat the bottom of a skillet with oil and bring to a medium-high heat. When a drop of water sizzles, it’s ready. Drop batter into skillet with a tablespoon and spread batter lightly to flatten into a pancake. Cook until browned– about 2 minutes on each side. Remove onto plate lined with paper towels to absorb excess oil.
Serve hot with the dipping sauce below or one of your choice ;
