Retro-Trendy (But Practical!) Picnic-In-A-Jar

So colorful and fresh, it will make you really look forward to your lunch!
1 quart sized, wide-mouth mason jar (or larger jar if you want)
Your favorite salad dressing
Your favorite salad makings such as:
· Mixed Greens
· Sliced Radishes
· Bits of Cauliflower &/or Broccoli
· Zucchini, chopped
· Carrots, shredded or chopped
· Sprouts or Pea Shoots
· Beets, shredded or chopped
· Cucumber, chopped
· Beans &/or Peas
· Bits of Cauliflower &/or Broccoli
· Zucchini, chopped
· Cherry Tomatoes
· Snipped Herbs
· Onion, Chopped
· Olives, Chopped
· Garbanzo or other beans
· Nuts and seeds
I used to make this when I was newly married in the early 70’s. Now it’s popular again. But here’s the secret: Put your dressing in first. Next, add whatever you’d like to have marinating in the dressing, like the garbanzo beans, zucchini or carrots. Layer about 1/2 way up, saving the last half for your greens, and nuts on top. Don’t pack the jar so full that you won’t be able to stir it later. When you’re ready to eat, shake the jar and use your fork to mix everything up. Done!
