Roasted Cauliflower with Garam Masala

I call Garam Masala the Scandanavian-Indian Fusion Spice! It is an Indian spice blend often paired with cauliflower. Most blends contain Cumin, Coriander, Cardamom, Cinnamon, Cloves and Nutmeg. The result is “sweet” and wonderful! If you are like me, and usually avoid Indian food because you think it’s too spicy, try this!

Note: there’s lots to love about our local Co-ops, and one awesome feature is that you can buy spices in bulk. So...you can buy just one teaspoon of a spice to see if you’ll like it. Trust me, all you’ll need to do is open the jar of garam masala and sniff —you’ll be sold!

1 small head cauliflower (or 1/2 large head), broken into florets

1 Tbsp. olive oil

1 tsp. garam masala (or more to your taste)

Salt

Toss cauliflower florets in a bowl with olive oil, garam masala, and a dash of salt. Roast on a baking sheet in a pre-heated 400 oven, for about 15 minutes, or until golden.
